Mayo on burgers/sandwiches is necessary because either the lettuce, tomato, or patty are wet/juicy enough to give you a soggy bun (which should optimally be toasted). In order to retain that toasty bun for as long as possible, the layer of oily mayo keeps them from seeping into the bun and leading to preemptive sog.

I fucking hate toasted bread, like I need my shit barely toasted if I can look at it and tell it was toasted it's too toasty for me.
